apparent overheating

I have a Ford fiesta y2000.

2 weeks ago The temperature gauge indicated overheating, the needle moving for the first time above the halfway point in the 2 years I have owned it. I went to the garage, coolant was low and was topped up. The garage advised it was ok.
I've noticed since that after between 20 and 30 minutes driving the temperature needle goes into the red box. I've taken it back to the initial garage twice and again to Ford garage but they advise nothing is wrong, and that the needle never goes above midway during their checks.

Yesterday I took 2 40 minute journeys

The first journey I tried to manage the apparent overheating by having the heat on full blast. The needle stayed in the red box for the second half of the journey. When I opened the engine it seemed cool enough.

On the return journey I turned the heat off and left the setting to cold. The air coming through was quite hot and there was a smell coming with it. The needle stayed in the red box for most of the journey and when I opened the engine afterwards it was much hotter then after the first check, and there was a gurgling noise from the engine. There was a 30 minute gap between the 2 journeys

Any ideas? I'm at a loss as to what to do because the 4 trips to 2 garages have shown nothing up in their checks but I don't feel confident taking it on long journeys.
