No special work needed. All the smallblocks had those ports in the heads and aftermarket intakes accomodate them just fine. Just pick out a "non-EGR" intake and you'll be fine.
Personally I and very fond of Weiand Stealth manifolds. They are a "high rise" dual plane though. For just putting around town a low rise such as an Edelbrock Performer might serve you better.
For bolt on and maintenance free (almost) use, it's hard to beat an Edelbrock Performer. One rated at 500cfm is just right for a 5.0/302 engine. Holleys tends to need more attention, fine in a race car, not so great in a daily driver. My Mustang I play with on weekends has a Holley, my truck I need to drive regularly has an Edelbrock.
If you haven't already, I suggest looking into some headers. With your other changes they'll be worth another couple of horsepower. And even better a mpg or two.
