It's a bugger at how something simple can turn into quite the disaster. I had a similar problem with a Miata rental several years ago. Contact Fords office and let them know about the problem. If necessary give them the name of the company that came out to change the tire for you so they can back up your problem with the jack breaking. If enough people complain about the problem a recall may be issued, but generally before a company spends money they'll issue a TSB (technical service bulletin) to the dealers to make them aware and possibly do something to help any other problems like this happen again. TSB's are generally sent to vehicle owners, you have to go to the dealer and check.
Just remember, when you check the pressure in your standard tires always check the spare, the narrow spare won't seem like it's 20-30psi low until you have to use it and then its too late. The spare tire is too soft even going around corners at 15mph so yes, it would come off the rim. If you drove the spare above 45mph (75km/h) it'll heat up excessively and become overly soft. Some spare tires hold up to 60psi and if you're ever unsure - just read the side of the tire.
