Actually there are lots of things you can do with a 2" receiver hitch. If you want to add a bike rack, utility box, etc it can come in handy as you'll be able to find that there are more options for versatility.
The dealer wasn't thinking: The max towing capacity with the Escape is 3500lbs with the V6 and around 1500lbs with the I4. Class III hitches are rated up to 5000lbs which is more than what the Escape's drivetrain, suspension and chassis is capable of handling safely. Class II hitches come on V6 models with tow package and class I should come on the I4 models so owners don't get the impression that they can tow more than what the vehicle is really capable of. Some trailer shops will try to sell you the largest trailer within' the weight capacity of the vehicle - they generally don't care if it's safe or not as long as they make their money. As the dealer installed the hitch they can be liable for any damages as they didn't do their homework.
