I wouldn't go with a smaller sized tire. The main thing is the load the tires can handle. The tires will undoubtedly wear quicker too. Going to a shorter sidewall and narrower width will effect the overall width of the tire but should still fit on the stock rim. Performance will improve as your RPM's will be higher at all speeds by about 8%. Stock tires are 29.0" and the tires you've asked about are 26.6" tall depending on tread depth, brand, etc. Personally, I'd pass on the deal for safety concerns but it seems more than doable.
