Question 2001 crown victoria cuts off when i press the gas

Does anyone know why it could be doing this?

I'd check the for a vacum leak, fuel filter,possible blocked cat.

If by 'cuts off' you mean it dies as you try to get under way and you have to restart several times before you can finally get going, search forums for "problems with the IAC".

What exactly do you mean by "cuts off"? Does it sputter? Does it lose power? Does it act like you turned the key to OFF? Does it slip out of gear & overrev?

Neither a vacuum leak nor an IAC would cause stalling at tip-in. Both cause idle problems & rapidly become less noticeable off-idle.
