93 Probe GT- new catalytic converter, gaskets

I am installing a new catalytic converter (Walker #15590). I bought two gaskets (#31532, left side of photos) before I realized gaskets (front of photos) are included with the converter. I'm not sure which gaskets to use. The included gaskets are different on each side. Which side goes toward the converter? The #31532 gaskets are the same on each side. Also, what can be used to remove pieces of the old gasket that remain on the connecting flanges (front pipe and resonator)? Thank you.

I believe the ones with the thicker inner ring go on the inlet.

Ever notice that there's so many high performance parts available for GM products?

Did you ever think that maybe they NEED them?
