The new Explorer looks to have a decent interior although I haven't seen one yet close up.
I'd put the Escape toward the top of the list for interiors. GM Equinox is decent as well. It really comes down to your own personal preference. GM and Kia/Hyundai are going for curves, while Ford is going for straight edge (read: boxy) look and Dodge and Toyota are somewhere between. I think the Toyota Highlander is a decent overall package. I took a 4cyl front wheel drive model for a spin a couple months ago and it was well balanced, easy to reach controls, but again, it's a personal preference as I'm sure you're not my height nor weight with similar arm reach, etc....
Honda Pilot is nice but the back row is tight, and with it up, you have NO luggage space. Traverse is nice too, with the flowing design theme and lower price over the Honda. The Honda V6 lacks highway pep due to the boxy aerodynamics. Not to say the GM one is without fault, as it's great on the highway, but can be sluggish around town when loaded.
