T is what was used from the factory, and would be appropriate for your Sable, as it gives you some breathing room above the rev limiter of 112 MPH.
The original tire was the Continental Touring Contact AS, you may be able to find some left over at a Ford dealer, as they are now discontinued. A good replacement other than the "Club" tires is the Yokohama AVID TRZ. I put a set on my mother's 99 Sable (different size than your's) and they are holding up very well, and have a quiet ride.
