When my 2003 Taurus roles over a few small jerky bumps in the road, the anti theft light comes on for a moment and the engine hesitates until the light goes off. It is happening more, and more frequently and I'm pretty sure it's going to strand me in some dark and desolate place if it's not fixed soon. What is going on?

There must be a poor connection somewhere in the system. It could be the ignition switch. Try turning the key a little with the engine running and see if it does it. Do you have a lot of items on the key ring?
