They really are two totally different cars.
One is a comfortable torque monster with heaps of mid range grunt. A pleasure to drive every day.
The other is a high revving, bucking beast, that is cramped but more fun (if somewhat slower) as long as you have fast reactions!
There is little doubt that the GT-p is the better all round car. The build quality is as far ahead of the Mustang as the best Euros are ahead of us. It's also more refined and relaxed but is let down by the weird engine management programming and driveline survival strategies that effectively make it a chore to drive hard.
The Mustang, on the other hand, will be the weapon of choice for a track day. It's got the more lively chassis and feels the better balanced of the two although it can catch you out much quicker as well. It's let down by a poor driving position for tall people and the fact that it doesn't really let you know when it's about to step out and if you aren't paying attention then you are disappearing off the circuit backwards.
In simple terms one (the GT-p) is a terminal understeerer while the Mustang is the exact opposite.
