The cooler stat paves the way for an edit to drop the fans to that heat range. The fans come in at 100deg C and turn of at around 94 or 96deg C (from memory). Puting the cooler stat in reduces heatsoak on the engine, with the new CAPA/SCT flash tuners you would be able to take further advantage of the system and make the fans come in and out at that cooler stage. However I would not run the car with a cooler stat less than we specifiy as the "Insufficient Temperature for Closed Loop Check Operation could be inhibited by the PCM.
The target temp is calibrated to the thermostat. Typically 20degF less than the stock thermostat hence a a 160degF stat is too cold.
