What would be the best way to store a GT or any car for say 12 Months without driving it , Would there be any damage on the engine not driving but only starting every so often??

Like empty the fuel or battery etc .....
make sure your fuel tank is full, pay up the insurance and ill look after it for you!

sounds odd but id actually fill the engine completely with oil to stop it seizing and rusting from moisture. i was serious about a full tank of petrol too...if its full then theres no room for condensation. is there anyone that could at least start it once a week for you?

If you are going to keep it in storage i think theres a sealed tent you put the car in and it circulates air constantly via a pump. This i think would stop any rubber turning to crap. I'm not sure where you can get these though.

maybe even ring Shannons as they deal with old cars so id assume that theyd have a bit of an idea what to do or even point you in the right direction. (not saying they just deal with old car but the point is they deal with the cream of the cream)
