I've just been through similiar costings for an EA, although mine is a Fairmont Ghia with a smick interior, it also came with a fully rebuilt suspension, lpg system and cooling (rad, thermo, hoses)
I found in Adelaide the cost of rebuilding the engine started from a very basic $1500 to $2500 for a fully rebuilt long motor, add in labour and additions, ( they will want to replace the water pump, hoses, poss the rad. etc) all up costs ran to $2400 up to $3600.
In the end I decided to go for a transplant, a local wrecker had an 88,000 km EL engine which is being transplanted for a total cost around $1400 including labour and additional parts.
If you can do the work yourself or have mates that can help you with the changeover you could be looking at as little as $500 including the motor, gaskets and rear main seal.

So look at all the options including how much cash you have to hand, others can fill you in on the cost of interior bits but it's too not much to do the interior, there may be people in the forums with spare bits they are willing to sell also.
In the case of a cracked dash ( common problem ) a dash mat and a few dabs of silicon to keep it in place makes a world of difference.
