I will soon be replacing the engine in my EA, while I have the replacement out I thought id do a few things to it, including replacing the sump gasket, just wondering what the best type of gasket to buy is, whether it be rubber cork or both and which ( if any ) sealant i should use

Just use a good cork one, and something like Permatex #3 Aviaton Gasket goo. Try to avoid silicone, not good if it gets inside the motor.

You will find the cork will relax a bit when you tighten, so go slow, and torque to around 8Nm to avoid squashing out the gasket.
