If some one was to knock out the guts of the catalytic conveter would this increase the rate of wear on the exhorst?

It would be a stupid and illegal thing to do. Get an aftermarket hi-flow cat if anything.
Knocking the guts out of your cat will provide you with next to zero performance increase and a hefty fine if you get caught.
