There is no best temp - it depends on what you want. 3000k HIDs are yellow and provide the brightest possible light. 4000-5000k HIDs are slightly dimmer and are white with a slight yellow hue. 6000-8000k are blue and output much less light than the white ones. 10000-12000k are purple and put out even less light than the blue ones (but still more than a stock halogen).
If you want lights that are bright and not too expensive, get Sylvania Silverstar Ultras - they're usually about $50-60 bucks at your local automotive store and are the brightest and whitest bulb you can get before going to HID. I use these and they are great.
If you are set on HIDs, realize that unless you buy the more expensive "dual-beam" kit for the 9007s in your 01 Eddie, you will lose your high-beam function.
