I live in texas and am cerious what the factory Temp is on a '97 3.8l mustang thermostat is. And if going to a 180° is considered wise.

I want to say it opens up at 195 or 197 can not recall which. A low-temp thermostat will improve performance by lowering the temp that the stat opens. This will Increase the Mass Flow Rate of Intake Air. It allows the engine to cool down to a lower Temp than Factory Stats would allow. It also, reduces an engine's tendency to detonate and will reduce temps of both the incoming Air/Fuel mixture and combustion chamber surface.
