Yep, I have a 2006 Escape that has been making the same squeak from the center of the dash at the windshield. It comes and goes with the temperature. In the Am, it is really loud, but by the time I get it to the dealer, the noise has gone away. This has been going on now for 3 years and I cannot get them to fix it---because they can't hear it.............I will not buy another Escape nor recommend them because of this issue.
What is this "dash protectant" spray that you are referring to?
The problem is more of a vibration than a squeak or rattle. The dash seems to be vibrating with the speed of the Escape. It reaches a loud harmonic pitch at 55-65 mph. At speeds less than 45, you cannot hear the noise from the vibration. In the old days, the back of the radio had a stud that was bolted to a bracket that attached to the dash. I guess with today's modular installations, this bracket system is no longer used?
Pushing on the dash does not make the vibration go away.

The fact that you note the vibration is happening at 45-65 mph makes me think of bad wheel bearings.

I have a 2003 Ford Escape Limited and I brought it brand new. I noticed the Sqeaks about 2 years ago and yes, it's very annoying and I have just learned to live with it. It's probably another Escape DEFECT.
No rattles on our 08 Tribute, which is an Escape with a different name.
Vibration can be induced by tires being out of balance and or not rotated. If you still have the Conti's that came with your Escape on it, have you meticuliously rotated and rebalanced the tires? If not, I suggest you get them replaced or do the maintenance. We have done the maintenance, but I know others have not and they are the folks that are doing all the complaining about the SUV. It's the tires, not the truck!

Does the back window hatch rattle? That is most annoying. I've read where some electrical tape wrapped around the part that holds the window shut will do the trick. I havn't tried it yet.
Your '08 should still be covered under basic warranty. I'd take it to the dealer and take the service person for a drive so they can pinpoint the noise. Dash protectant spray won't eliminate squeaks. If anything else it may start them as most protectants are slippery, high gloss substances.
