What's the purpose of this comparison?
If the Vitara 2.7 is a 5 speed, it's a good engine for what it is, but the weight of the Vitara itself would make it seem similar to the 5 speed 2.5L Escape, as the Escape is lighter.
Acceleration will be similar as the Escape weighs less, and to compare engine speed at 60mph the 5 speed manual base Ford Escape should turn over around 2600rpm. I'm not sure what the Vitara V6 turns at 60mph, but that's to give you an idea on the Escape.
Passing on the highway will be a little better with the V6, as displacement rules in passing power. Torque band is a touch lower in the Vitara. If you're after mileage, the Escape would be the way to go, while offering similar if not better mileage, cruising range, payload, etc.
The only thing that will suffer some is towing capacity. The Escape 4cyl can tow a max of 1500lbs if that matters to you.
