You could get something like my current toy. I've got a 4 door Mk II Escort Ghia, powered by the 2.0L OHC 'Pinto' 4 cyl with the 4 speed manual. It cost me $50 to buy, I've spent more then that getting it up to roadworthy (new tyres, putting the engine together - it was in pieces when I got it, new exhaust, new radiator, new drivers door - old one had been cut with an angle grinder..., fix up the rust, new brake pads, new steering column, & a few other things).
It may not be an RS2000, but it goes hard when I put my foot down and gets pretty good fuel econ. And once I get the paint resprayed it'll look good, I'm going for the 'rally car' look with the front and rear spoiler (already got them), fog lights and a few other little things to make it look nice.
You should be able to get one in good condition like mine that doesn't need anything to be fixed (for the roadworthy, I'm not trying to say it'll look beautiful but it should be ok mechanically) for somewhere between $500 and $2000, depending on how well looked after it's been.
Oh, and most people (asides from a few people on here who really know their Escorts) would be suprised how much power you can get out of the 2.0 'Pinto' (or even the 1.6 OHV 'Kent' engine), and when you combine that with decent gearing in the manual gearbox and the light weight of the entire car, you end up with something that can give most commodores a good scare, and even suprise a few fast falcons! I've got a book here by Steve Visard, and according to that book (which is THE bible on modifing the Ford OHC 4 'Pinto' engine), it's possible to get 100hp/litre out of it (so 200hp), normally asperated, and double that (400hp! 100 horsepower PER CYLINDER!) if you turbo it. And that isn't even taking the engine to it's absolute limit!
