Shouldn't this be posted in the Europe section as you did not include any American Model Escorts? Although I do like some of the European Models, I still would not choose them over my 93 GT....I have put 156,000 miles on the car in 7 of the 10 years of existence....it was in storage for 3 years while I was in Europen myself. If I had to choose the European Model Escort I liked the best I would have to choos the 88 XR3i Cabrio that I owned while there....although not tons of power, it was very nimble, fun to drive, stylish and could still get up there to 120 mph.
I correct myself I did not see the Mexico Model in the list at first.
I voted for the Mk II RS 2000. The last of the Leaf Sprung (tm) 2 Litre Escorts.

my favourite would have to be the MK2 RS1800,a real sleeper of a car,1.8 ltr,all alloy BDA eng,ZF
5 speed box,lsd...looked like a rally pack,they are as rare as rocking horse shit,and were a homologisation(spelling?) special for rally....
Also another favourite is the MK1 RS 1600,these were the first of the BDA powered escorts done for rallying,tho they were 1.6 ltrs..they also had the twin sidedraft webers,but they had a cast iron block and a 4 speed box. These escorts owned the rally championships,and are very desirable collectors cars..

The RS1800 was the basis for a great Rally Car. Just a pity they left the factory with a Single 2 Barrel Down Draft Webber.
