I might opt for more carburtor than an Edelbrock 750, perhaps a Holley 750 or Holley 850. The Edelbrock may prove to be too lean in such a big vehicle that will impose substantial loads on the engine.
You have not provided much info about your engine combination but based on your given specs and assuming pump gas compression ratios I might believe somewhere in the neighborhood of 470-520 hp. Also, torque in your particular combination ought to really impress you for the truck applicaiton.
