When the last time you look into the carburetor. If they sat for long period of time the gas in the rear bowl doesn't get used unless it's wide open during acceleration. It might just be a simple float level adjustments and good cleaning.

I would check engine timing. If engine timing gears aren't properly aligned it can cause problem you are describing.

Sounds like you need to go up a size or two on the pump discharge nozzel, I fitted a 670 Street Avenger & found it was set incredibly lean, ended up putting a massive pump nozzel in (40 I think) cured most of the problems you describe.
I still have a slight hesitation but reckon I can smooth that out with a different power valve.;

Sounds if you're going lean. It's called reversion when it pops back out the carb. As the weather has gotten colder, your engine needs a richer mixture. My carbed Harley Davidson bike does this a lot in cold weather. You were probably on the edge of lean when the weather was warmer and now it's lean. There are several possible cures. It could be that your carb is jetted too lean. If you're not lean, then you either need a bigger squirter nozzle or big squirter cam on the carb. None of these fixes are expensive or difficult. Just might take a little adjusting to get it right.
