Question Advice on upgrading EA2 wagon

Hi there - I've got an '91 EA2 wagon. Owned it for a bit over a year and when bits need replacing/ works needs doing I take it as an opportunity for an upgrade.

Noticeably I've put in a K&N panel filter and changed the wheels/ tyres to a 16" ROH Envy/ Firehawk combo.

One of the baffles in the muffler has worked it's way loose and I'm using this as an excuse to look at extractors/ stainless straight through exhaust (although I'm in New Zealand, and they've introduced some pretty brutal exhaust system laws.)

I want to check that I'm heading in the right direction with the exhaust, and to ask about the following:

The head gasket is leaking into the 6th cylinder, it's looking like I might need to get the head rewelded because of corrosion. If this is the case - while I've got the head off - is it worthwhile doing anything else to the engine?

As far as use goes I do a lot of heavy towing, a lot of gravel road work, and a lot of long distance. So looking for more power and efficiency.

Cheers in advance
