I have 1 3/4 primaries, which is really 1 6/8, compared to 1 7/8. Really not that much difference. I'm only spinning my motor to 5500 with a warm hydraulic cam at the moment and it makes a hell of a difference! (with a 2.5" twin). I don't think your twin into a 3" single tail pipe will make much difference.
Yep, always think of later on with bigger rebuilds. A twin 2.5 would be much better than a twin 2"............and wouldn't hurt you at all in the mean time. Did you go the mandrel bends?

yeah told my guy to fit mandrel 2.5 if he can, I wanted mandrel pipes so if i have to go 2.25, i'll still be happy. Only paying about $550 for complete system so if i need if changed later, no big deal :)
Question: with all the big exhausts everyone is fitting to their cars, what are you doing to stop the rear brake hose from melting, (assuming the car was originally fitted with single exhaust)? I have had a 2.5" twin system fitted and been left in a dangerous, no drive situation

Just ensure that it is securely fixed to the axel housing, if it is flapping around. A good exhaust fitter should look for things like this and either fix it for you, or let you know so you can do it yourself.
The pipes going over the axels have plenty of clearance on my system.

Just get a piece of reasonably stiff wire (strong enough to hold its shape for the job) and wind it round the brake hose a 4-5 times and then bend it to shape tp keep it away from the exhaust.
Otherwise, get someone like Pirtek to make you different hose with fittings to keep well away from the exhaust

This may have already been answered but i had a complete 2-1/4in twin system fitted to my 84 LTD (same as XE) by Tuffy mufflers at rosebery the tailpipes exited out the same side was a tight fit but never gave me a problem and sounded awesome.
I run dual 2 1/4 to the diff and it sounds unreal. Especially when your idling at the lights and the rice burners pull up beside you and the thing just lets them know who;s boss.
