Question 1995 Mystique overheating

Hi all, my problem is this:

my car its ok in the daily driving only reach the "m" of normal temperature gauge sometimes, I put on the a/c and its ok, but 20 minutes later suddenly the gauge increases next to the red lines and vapor is out of the recipient of the water and always happen that way, when the car is hot I put the panel defroster and hot air flow this helps to descrease the temperature, I add water and strange noise coming out and gurgles water out, what its the first thing to check?

Thermostat may not be working properly. Also check to see if the electric cooling fan is coming on. I guess you did check the fluid level.
English is fine.
