1973 Gran Torino Sport - Gas question

Hi everyone, I am new here and new to owning a Gran Torino. Just picked up a 1973 Gran Torino Sport with 351C. The question I have. The owners manual states to use "regular" 91 Octane gas. I take it that regular is "leaded" however if the engine was rebuilt a few years ago would that mean it is good to use unleaded? How could I tell which gas I should use? Use unleaded and add lead substitute or just use premium unleaded?

If it was rebuilt a few years ago, hardened valve seats were used. Its ok to use regular unleaded.
