If I decided to not get a supercharger (it isn't out of the question, just considering options) would I see any difference from an aftermarket exhaust, intake, throttlebody, air box, injectors, and remapping the ECU?

Definitely maybe. It really depends on whether there's equipment to open up your ports. The tune should help, I doubt if there's an aggressive tune in a 2001 Tribute. Which engine?

Ever notice that there's so many high performance parts available for GM products?

Did you ever think that maybe they NEED them?

There's not really a lot of performance parts for the Duratec, to gain other than tuning will probably require designing and machining. However.... if you're creative enough, the engine of an SHO should fit in the same hole. Not sure how much is compatible, may require taking the transmission, too. Keep in mind that any significant changes in torque and horse power may require up grading the rest of the drive train.

If I were to get a supercharger, what kind should I get? Will it come with all of the parts or do I have to buy the intercooler and piping etc... seperate?

Since it never designed with a turbo, a certain amount of re-plumbing is expected. Most kits are built with specific models in mind, so you're probably on your own for design. The Escape shares a lot with the Ranger, maybe looking that direction may help you. Found a link where you may find some ideas and products.
