I placed a second hand steering rack in it. Using the gauge, it goes to 1400psi on right turn for a split second while I'm on full lock, and drops back to 200psi. The same on left turn. Should I keep looking for a second hand rack, or put a kit through?
By the gauge, the pump is good.
Any other advice?
I'm not too worried about the horn, or the air bag flashing light, until I get this rack right.?

If you are talking the driver's side airbag It's in section 18-6-80 and 22-1-15 of the workshop manual. It's a special Prolock 30 IPR Torx Plus Bit which is a 5 point Torx bit not the standard 6 point torx bit Make sure you deactivate the air bag per the procedure in 18-6-6 and 18-6-80. If you don't want the airbag to explode in your face, first (disconnect battery for 30 mins, turn headlights on to discharge any remaining capacitance and make sure you very carefully unplug the wires to the clock spring and put the airbag to one side). i. Here Toledo Torx Bit Set 5 Point 11 Piece or https://www.amazon.com/Protorq-5-Point-Tamper-Proof-Security-Pieces/dp/B07TN64T87/ref=sr_1_5?crid=252JRMSKDW0D&keywords=5+point+torx+security+bits&qid=1677806470&sprefix=5+point+torx+bits,aps,337&sr=8-5 or Prolok 30 IPR Torx Plus Insert Bit ¼ Hex x 25mm or https://www.amazon.com/Ram-Pro-Point-Security-Tamper-Driver/dp/B01IUCONNY/ref=sr_1_8?crid=252JRMSKDW0D&keywords=5+point+torx+security+bits&qid=1677806524&sprefix=5+point+torx+bits,aps,337&sr=8-8 etc.

No; you'll just have to scrap the car. Sorry; just kidding; it should be fine. Try and make sure it's completely intact with all wiring connectors, mounting pegs and mounting pins undamaged and accounted for. Also check the spring rotates freely in its case. If possible/ideally try and get one that has been pre-tested and "timed" so it will fit and work correctly and line up as needed when placed on the steering shaft with the front wheels in the straight ahead position. But it will probably be case of take what you can get.

* This wire was connected to the back, like a ground wire and it looks like its been cut. It doesn't seem to be warranted?

Since I have to get it second hand, should I get the blinker light control unit, so the clock spring is 100% straight, or is there a way to line it up?

Yes; looks like someone made a temporary ground to fix an issue then found another solution (probably found a disconnected dash earth).

Your faith in my advice is heartwarming, but I have to remind you that as nobody in my immediate family ever owned an AU model, the experience of this increasingly forgetful old man (and getting older daily and feeling it more) with working on their air bag systems is limited I think to just two vehicles and that was more than a decade ago. So, while I think the answer is "no", I really don't know and if the cost difference is marginal it can't hurt.

I appreciate all your help.
I placed the second hand clock spring in, Airbag light is off, Horn works, All electronics on the steering wheel work,
However, now the odometer stays on, when the car is off.
The wire from the clock spring, looks like a ground wire, i cant seem to find where it goes, Do I make a new ground?
These are the two wires from the au falcon clock spring
Cable Auto part Fashion accessory Data transfer cable Wire
Cable Gadget Computer data storage Fashion accessory Wire

I found these three codes and I'm not sure how to fix them
Code: B1934 - Air Bag Driver Circuit Short
Code: B1887 - Driver Airbag Short to Ground
Code: B1932 - Air Bag Driver Circuit Open

This YouTube Video should help esp, around the 4.45 minute mark. The plug into the instrument panel wiring harness on the steering column per:

Also from the factory workshop manual:

His second and third video is also worth a look just in case:
