If you delete the cats, you have to properly tell the computer to ignore new values, or NO values its seeing. Bogging down on acceleration is usually a plugged cat, but the computer will see it as an incorrect correlation between usually the MAF, TPS, MAP, APP sensors and not know where to adjust. Sounds like you just need a knowledgable guy to tune it properly. Your fuel pressure is fine.
Id read the O2 sensors (whichever ones are left), and see whats coming down the pipes..itll tell you everything.
