Hey the engine in my 2000 Excursion just died it was a Triton V10. Would the V8 Diesel just bolt up to the Tranny?

The powerstroke uses SAE bellhousing bolt pattern while the Triton V10 uses the Ford Modular bolt pattern. Powerstrokes come from the factory with an adapter plate that allows the powerstoke to be bolted to the ford tranny, so yes, it'll bolt up as long as you get that adapter plate.

I would've thought that the V10 tranny won't have the torque capacity to handle the diesel engine? 75lb feet may not seem like a lot when your already in the 400 range but lowering the max torque rpm by over 1000 may tear it apart?

The V10 is still in production on F250/F350 trucks. The new Expedition EL replaced the Excursion which stopped production two years ago :(
